Wild garlic capers

  • Makes: ± 1 small jar
  • Time: 15 min + 1 week fermenting
  • From: Wild garlic

Ingredients

  • 100 g green wild garlic seed pods
  • 250 ml water
  • 7.5 g salt (3 %)

Method

  1. Strip the green seed pods from the stems and rinse them.
  2. Dissolve the salt in the water.
  3. Put the pods in a small clean jar, pour over the brine and weigh them down (a bag of brine or a glass disc) so everything stays submerged.
  4. Close loosely and leave to ferment for 5 to 7 days at room temperature, then move them to the fridge.

Storing: A few months in the fridge, always under the brine. Use them like capers, in sauces, salads or with fish.
