Summer salad with marsh mallow and goat’s cheese

Ingredients

  • 150 g mixed salad leaves
  • 1 handful of young marsh mallow leaves from the stem tips
  • 1 handful of marsh mallow flowers
  • 100 g soft goat’s cheese
  • 2 tablespoons toasted sunflower seeds
  • 3 tablespoons olive oil
  • 1 tablespoon cider vinegar
  • 1 teaspoon honey
  • salt and pepper

Method

  1. Wash the salad leaves and marsh mallow leaves and pat dry. Cut the marsh mallow leaves into thin strips.
  2. Whisk the oil, vinegar, honey, salt and pepper into a dressing.
  3. Toss the salad and marsh mallow with the dressing and divide between plates.
  4. Crumble over the goat’s cheese, sprinkle with the sunflower seeds and add the flowers at the very last moment.

Storing: Eat the salad straight away: the flowers wilt quickly.
