Green almonds with salt and lemon
- Makes: 4 servings (as a nibble)
- Time: 10 min
- From: Almond
Ingredients
- 300 g green almonds from a tree with sweet almonds (shell still soft)
- 1 tbsp coarse sea salt or fleur de sel
- 1 unwaxed lemon
- 2 tbsp olive oil (optional)
Method
- Choose only fruit whose shell is still completely soft. Cut one open: if the shell is already hard, do not use that fruit.
- Taste a small piece of one fruit. If it is bitter, stop: do not eat any almonds from that tree.
- Rinse the almonds and rub off the fuzz with a clean cloth.
- Toss them with the oil, a little salt, the juice and the finely grated zest of the lemon.
- Serve at once as a nibble with drinks, with extra salt for dipping.
Storing: Eat straight away; in the fridge they keep for 2 days at most.
