Amaranth porridge with apple and cinnamon
- Makes: 2 people
- Time: 35 min
- From: Love-lies-bleeding
Ingredients
- 100 g amaranth seed
- 300 ml water
- 200 ml milk
- a pinch of salt
- 1 apple
- ½ teaspoon cinnamon
- 1 to 2 tablespoons honey
Method
- Rinse the seed in a very fine sieve under cold water and leave to drain.
- Bring it to the boil with the water and salt, turn the heat down, cover and simmer gently for 20 minutes. Stir now and then so it does not catch.
- Meanwhile grate the apple coarsely. Stir the milk, apple and cinnamon into the porridge and simmer for another 5 minutes until creamy.
- Divide between two bowls and sweeten with honey. Scatter over some popped amaranth or nuts if you like.
Storing: A day in the fridge; reheat with a splash of milk. The porridge thickens as it cools.
