Popped amaranth

Ingredients

  • 4 tablespoons amaranth seed, cleaned and dry
  • a pinch of cinnamon or salt (optional)

Method

  1. Heat a dry, heavy-based pan over a high heat. It is hot enough when a drop of water sizzles at once and rolls away.
  2. Add 1 tablespoon of seed, put on the lid and shake the pan. After 10 to 20 seconds most of the seeds pop into little white balls.
  3. Tip them straight into a bowl before they burn, and pop the rest the same way, a tablespoon at a time.
  4. Season with cinnamon or salt. Sprinkle popped amaranth over yoghurt, muesli, salad or soup, or mix it with honey to make bars.

Storing: Leave to cool and keep in a tightly closed jar: it stays crisp for two weeks.
