Braised garden orache with garlic

Ingredients

  • 500 g young garden orache leaves and tips
  • 1 shallot
  • 1 clove of garlic
  • 20 g butter
  • a pinch of nutmeg
  • salt and pepper

Method

  1. Wash the orache thoroughly and remove any thick stalks.
  2. Blanch the leaves for 2 minutes in boiling water, drain, pour away the cooking water and squeeze the leaves well. Chop them roughly.
  3. Chop the shallot and garlic and soften them gently in the butter without letting them brown.
  4. Add the orache, heat through for 2 to 3 minutes and season with nutmeg, salt and pepper. Lovely with fish, eggs or potatoes.

Storing: Eat it straight away; cool leftovers quickly and keep them for a day at most in the fridge.
