Beech-leaf liqueur
- Makes: ± 0.8 litre
- Time: 20 min + 2 weeks steeping
- From: Beech
Ingredients
- 2 handfuls young beech leaves (± 50 g)
- 500 ml gin
- 200 g sugar
- 150 ml water
- 50 ml brandy or cognac (optional)
Method
- Pull the leaves off the twigs and loosely fill a glass jar with them.
- Pour over the gin until everything is covered, close and leave to steep for 2 weeks in a dark place.
- Strain through a coffee filter.
- Boil the water and sugar into a clear syrup and leave to cool.
- Mix the syrup, infusion and brandy, bottle it and leave to rest for another few weeks.
Storing: Keeps for years in a cool, dark place; the green colour fades, the flavour does not.
