Dried goji berries

Ingredients

  • 500 g fully ripe goji berries
  • baking paper, if you dry in the oven

Method

  1. Sort the berries: keep only fully ripe, orange-red ones and remove any stalks and leaves.
  2. Rinse them briefly, drain well and pat them gently dry.
  3. Spread them in a single layer on the trays of a dehydrator, without letting them touch.
  4. Dry for 12–24 hours at 50–55 °C (in an ordinary oven: lowest setting, door slightly open), turning them now and then.
  5. They are done when they are wrinkled and leathery, no longer sticky, and no juice comes out when you press one.
  6. Leave to cool and put them in a jar. Shake it daily for the first few days: if condensation forms, dry them a little longer.

Storing: A year in a tightly closed jar, dry and dark.
