Hazelnut liqueur

  • Makes: ± 700 ml
  • Time: 30 min + 3 weeks steeping + 1 month maturing
  • From: Turkish hazel

Ingredients

  • 200 g shelled, roasted hazelnuts
  • 500 ml vodka or grain gin (35–40 % alcohol)
  • 1 vanilla pod
  • 200 g sugar
  • 150 ml water

Method

  1. Chop the nuts coarsely and put them with the split vanilla pod in a screw-top jar. Pour the alcohol over.
  2. Close and leave to steep for 3 weeks in the dark. Shake every few days.
  3. Bring the sugar and water to the boil until the sugar has dissolved and leave the syrup to cool completely.
  4. Strain the alcohol through a fine sieve and then a coffee filter. This is slow, so give it time.
  5. Mix with the cooled syrup, pour into clean bottles with stoppers and leave to mature for another month in a cool, dark place.

Storing: A year in a cool, dark place. The liqueur contains about 25 % alcohol and is not for children.
