Dried mandarin peel

  • Makes: ± 30 g
  • Time: 15 min + 3 to 7 days drying
  • From: Mandarin

Ingredients

  • the peel of 8 mandarins from your own plant
  • a rack or a baking tray lined with baking paper

Method

  1. Wash the mandarins in warm water and dry them. Peel them in large pieces; eat the segments or use them in a salad.
  2. Scrape off as much of the white pith on the inside as you can with a teaspoon: it is bitter.
  3. Lay the pieces of peel on the rack or tray somewhere warm and dry, on a radiator for example, and leave them to dry for 3 to 7 days until hard and brittle. It is quicker in the oven at no more than 50 °C with the door ajar, in 2 to 3 hours.
  4. Keep the peel in a closed jar. Add a piece to tea, a stew or rice, or grind it finely for biscuits and cakes.

Storing: A year in a tightly closed jar, dry and dark.
