Sugar scented with pinks

  • Makes: 1 small jar (± 200 g)
  • Time: 10 min + 2 weeks infusing
  • From: Common pink

Ingredients

  • 2 large handfuls of petals from scented, unsprayed pinks (± 20 g)
  • 200 g granulated sugar

Method

  1. Pull the petals out of the calyx, snip off the white base and leave them to dry on kitchen paper for an hour: they must be completely dry.
  2. Scatter a layer of sugar in a clean, dry jar, then layer petals and sugar; finish with sugar.
  3. Close the jar and leave it for 2 weeks somewhere dry and out of the sun. Shake it every day: the sugar takes on the clove scent.
  4. Sift out the petals, or leave them in if they are completely dry. Crush any lumps with a spoon.

Storing: Tightly closed and dry: a year. Sprinkle the sugar over strawberries, rhubarb or yoghurt, or use it in biscuits, whipped cream or a cake.
