Sea buckthorn liqueur

  • Makes: makes ± 1 litre
  • Time: 20 min + 6 weeks infusing
  • From: Sea buckthorn

Ingredients

  • 300 g sea buckthorn berries, without twigs and leaves
  • 250 g sugar
  • 500 ml vodka or grain jenever (35–40 %)
  • 150 ml water
  • 1 piece of vanilla pod (optional)

Method

  1. First freeze the berries overnight, still on their twigs. Frozen berries come off easily and give more juice.
  2. Rinse the berries and lightly crush them with a pestle in a large, clean jar. Beware of splashes, as the juice stains badly.
  3. Add the sugar and the piece of vanilla and pour the vodka over the top. Close the jar and shake well.
  4. Leave to infuse for 6 weeks in a dark place. Shake every few days for the first weeks, until the sugar has dissolved.
  5. Strain the liqueur through a fine cloth or a coffee filter. Do not squeeze too hard, or it will turn cloudy.
  6. If you like, dissolve a little extra sugar in 150 ml warm water, let it cool and stir in as much as you like.
  7. Pour the liqueur into clean, sterilised bottles and leave it to mature for another 2 weeks.

Storing: A year in a cool, dark place. A little sediment is normal; shake gently. The liqueur contains alcohol and is not suitable for children or pregnant women.
