Sea buckthorn and orange sorbet

  • Makes: serves ± 6 (750 ml)
  • Time: 30 min + 4–5 hours freezing
  • From: Sea buckthorn

Ingredients

  • 400 g sea buckthorn berries (fresh or frozen)
  • 150 g sugar
  • 250 ml water
  • juice of 2 oranges (± 200 ml)

Method

  1. Bring the berries to the boil with the water and sugar and simmer for 10 minutes, until the berries have burst.
  2. Rub the mixture through a fine sieve, pressing well with a spoon. The seeds and skins stay behind.
  3. Stir in the orange juice, taste and add a little more sugar if needed. Leave to cool and chill in the fridge for 2 hours.
  4. Pour the mixture into a shallow, freezer-proof container and put it in the freezer.
  5. After 1 hour, stir vigorously with a fork to break up the ice crystals and repeat this 3 or 4 times, once an hour. If you have an ice cream machine, churn it according to the instructions.
  6. Take the sorbet out of the freezer 10 minutes before serving.

Storing: 2 months in the freezer in a closed container. The juice stains badly, so beware of your clothes.
