Dried thyme
- Makes: ± 25 g dried leaves
- Time: 15 min + 1–2 weeks drying
- From: Garden thyme
Ingredients
- 1 large bunch of fresh thyme (± 100 g), picked on a dry morning
- kitchen string for tying
Method
- Shake the sprigs well to remove insects and dust. Preferably do not wash them; if you have, pat them completely dry.
- Tie the sprigs in small bunches of 8–10 with kitchen string.
- Hang the bunches upside down in a warm, airy, dark place. You can hang them in a paper bag with holes in it to keep off the dust.
- After 1–2 weeks the leaves are dry and crumble at a touch. If you are in a hurry, dry them for 2–3 hours in a dehydrator at 40 °C.
- Strip the leaves from the stalks over a bowl and tip them into a clean, dry jar.
Storing: Up to a year in a tightly closed jar, dry and dark; the flavour fades gradually.
