Rose hip liqueur

  • Makes: ± 600 ml
  • Time: 30 min + 8 weeks steeping and maturing
  • From: Sweet-briar

Ingredients

  • 250 g rose hips
  • 500 ml gin or vodka (± 40 %)
  • 150 g sugar
  • 1 cinnamon stick
  • 1 strip of unwaxed orange peel

Method

  1. Remove the stalk and flower remnant, halve the hips and scrape out the seeds and hairs.
  2. Put the hips with the sugar, cinnamon and orange peel in a clean jar of about 1 litre.
  3. Pour the spirit over, close and shake well.
  4. Leave for 6 weeks in a cool, dark place, shaking briefly each week.
  5. Strain the liqueur through a fine cloth or coffee filter so that all the hairs stay behind. Repeat once more.
  6. Pour into clean bottles and leave to mature for another 2 weeks before tasting.

Storing: A year or more in a cool, dark place. The liqueur contains alcohol and is not for children.
