Dried wild service berries

  • Makes: ± 150 g
  • Time: 20 min + 1–2 weeks bletting + 8–12 hrs drying
  • From: Wild service tree

Ingredients

  • 500 g wild service berries, only just bletted
  • ground cinnamon (optional)

Method

  1. Leave the berries to ripen for 1–2 weeks in a crate, until they just start to soften. Throw away any mouldy or rotten ones.
  2. Rinse them briefly, pat dry and lay them in a single layer on a rack or a baking tray lined with baking paper. Sprinkle with cinnamon if you like.
  3. Dry them for 8–12 hours in an oven at 50–60 °C with the door slightly ajar, or in a dehydrator. Turn them now and then.
  4. They are ready when they are soft and sticky like a dried date and no moisture comes out when you press them.
  5. Leave to cool completely and put them in a jar. Shake it daily for the first week. If condensation forms, dry the berries a little longer.
  6. Use them like dates: in muesli, in cakes, in stews or as a snack. Do not eat the stones, spit them out.

Storing: A year in a closed jar, dry and dark. If the berries turn damp or mouldy, throw them away.
