Liquorice sticks for chewing

  • Makes: ± 20 sticks
  • Time: 20 min + 2 to 3 weeks drying
  • From: Liquorice

Ingredients

  • ± 250 g fresh liquorice roots and runners
  • a brush and a sharp knife

Method

  1. Scrub the roots well under running water and trim off the fine rootlets.
  2. Cut them into sticks of 10 to 15 cm, from pencil to finger thickness; split thicker pieces lengthways.
  3. Lay the sticks side by side on a rack somewhere airy and warm, out of the sun, and leave to dry for 2 to 3 weeks until hard.
  4. Chew the end until it frays like a small brush: that releases the sweet flavour. Cut off the chewed part.

Storing: At least a year in a closed jar. A stick now and then, not all day long: liquorice is something to use in moderation.
