Cranberry sauce
- Makes: ± 400 ml
- Time: 20 min
- From: American cranberry
Ingredients
- 300 g cranberries
- 100 g sugar (to taste)
- 150 ml orange juice
- zest of ½ unwaxed orange
- 1 cinnamon stick
Method
- Sort the berries: remove any soft or mouldy ones and rinse the rest.
- Put everything in a pan and bring to the boil.
- Simmer for 10 minutes, until most of the berries burst. Stir now and then.
- Remove the cinnamon stick and orange zest, taste and add a little more sugar if needed.
- Leave to cool: the sauce thickens as it does.
Storing: In a clean jar, 2–3 weeks in the fridge or 6 months in the freezer. Good with turkey, game, cheese or pâté.
