Cranberry syrup

Ingredients

  • 300 g cranberries
  • 300 ml water
  • 150 g sugar
  • 1 tablespoon lemon juice

Method

  1. Sort and rinse the berries. Simmer them with the water for 15 minutes, until they burst.
  2. Mash them lightly and leave to drain for 30 minutes through a fine sieve or cloth.
  3. Pour the juice back into the pan and add the sugar and lemon juice.
  4. Heat, stirring, until the sugar has dissolved and simmer for 2 minutes.
  5. Pour the syrup hot into a sterilised bottle and seal at once.

Storing: Four months in a cool, dark place; once opened, in the fridge. Dilute 1 part syrup with 5 to 6 parts still or sparkling water, or use it in cocktails.
