Dried cranberries

Ingredients

  • 300 g cranberries
  • 1 litre boiling water
  • 250 ml water
  • 150 g sugar

Method

  1. Sort and rinse the berries. Dip them in the boiling water for 1 minute, until the skins split, and drain.
  2. Bring 250 ml water and the sugar to the boil, take the pan off the heat and leave the berries to soak in the syrup for 30 minutes.
  3. Drain the berries well and pat them dry.
  4. Spread them in a single layer on the trays of a dehydrator or on an oven rack lined with baking paper.
  5. Dry for 10–14 hours at 60 °C (in an ordinary oven: lowest setting, door slightly open). They are done when they are leathery and no longer sticky.
  6. Leave to cool and put them in a jar. Shake it daily for the first few days: if condensation forms, dry them a little longer.

Storing: Six months in a tightly closed jar, dry and dark. Good in muesli, biscuits and salads.
