Wineberry jam

Ingredients

  • 1 kg Japanese wineberries
  • juice of 1 lemon
  • 500 g jam sugar with pectin (2:1)

Method

  1. Remove the sepals and stalks and rinse the berries very briefly; they are very soft.
  2. Simmer the berries with the lemon juice for 5 minutes, until they fall apart.
  3. If you do not want seeds, rub the mixture through a fine sieve and return it to the pan.
  4. Add the jam sugar and bring to the boil, stirring.
  5. Boil hard for 4 minutes (or as the packet says) and skim off the foam.
  6. Fill hot, clean jars to the brim, close and turn them upside down for 5 minutes.

Storing: A year in a cool, dark place; once opened, in the fridge.
