Jostaberry liqueur

  • Makes: ± 1 litre
  • Time: 20 min + 6–8 weeks steeping
  • From: Jostaberry

Ingredients

  • 500 g jostaberries
  • 250 g sugar
  • 750 ml vodka or jenever (± 40 %)
  • 2 cloves (optional)

Method

  1. Rinse the berries, leave them to dry thoroughly, snip off the stalks and crush them lightly with a fork.
  2. Put the berries, sugar and cloves in a clean 1.5-litre jar and pour the alcohol over.
  3. Close and shake daily until the sugar has dissolved, after about a week. After that, weekly.
  4. Leave to steep for 6–8 weeks in a cool, dark place.
  5. Strain the liqueur and pour it into clean bottles.
  6. Leave it to mature for another 4 weeks: the flavour will be rounder.

Storing: At least a year, tightly closed, in a cool, dark place. Contains ± 25 % alcohol: drink in moderation and not for children.
