Judas tree flower fritters
- Makes: ± 20 fritters
- Time: 30 min
- From: Judas tree
Ingredients
- ± 40 small clusters of Judas tree flowers (3–5 flowers each)
- 100 g plain flour
- 1 tablespoon sugar
- 1 pinch of salt
- 150 ml sparkling water or light beer
- 1 egg white
- ± 1 litre sunflower oil for frying
- icing sugar or honey to serve
Method
- Pick the flowers on a dry morning from an unsprayed tree. Leave plenty of flowers for the bees and bumblebees. Shake the clusters to remove insects.
- Stir the flour, sugar and salt with the sparkling water into a smooth, thin batter. Whisk the egg white stiff and fold it in. Leave to rest for 10 min.
- Heat the oil in a deep pan to 175 °C (a cube of bread turns golden in about 30 sec). Take care: hot oil is dangerous, never leave the pan unattended.
- Dip each cluster in the batter, let it drip for a moment and fry 4 or 5 fritters at a time for 1–2 min, until golden.
- Drain the fritters on kitchen paper.
- Dust with icing sugar or drizzle with honey. Eat them warm.
Storing: Eat straight away: fritters soon go limp. Do not keep the batter. The Judas tree is a legume: if you are allergic to pulses, better leave the flowers alone.
