Syrup · From Bladwijzer
Judas tree flower syrup
- Makes: ± 600 ml
- Time: 20 min + 24 hrs steeping
- From: Judas tree
Ingredients
- 60 g fresh Judas tree flowers (about 4 handfuls)
- 500 ml water
- 500 g sugar
- juice of 1 lemon
Method
- Pick the flowers on a dry, sunny day from an unsprayed tree. Leave plenty of flowers for the bees and bumblebees.
- Shake the flowers to remove insects and take off the thick stalks.
- Bring the water and sugar to the boil and simmer for 5 min.
- Take the pan off the heat and stir in the flowers and lemon juice straight away. All the flowers must be submerged.
- Cover, leave to cool and put in the fridge for 24 hrs.
- Strain through a fine cloth, squeeze the flowers lightly and pour the syrup into a clean bottle.
Storing: In the fridge for 1 month, or freeze it in ice cube trays: 6 months. Dilute 1 part syrup with 5 parts still or sparkling water. The Judas tree is a legume: if you are allergic to pulses, better leave the flowers alone.
