Dried kiwi slices
- Makes: makes ± 100 g dried kiwi
- Time: 20 min + 6–10 hours drying
- From: Kiwi fruit
Ingredients
- 600 g firm, ripe kiwis (± 6)
- juice of ½ lemon (optional)
Method
- After picking, let the kiwis ripen indoors until they just give a little under your finger.
- Peel the kiwis and cut them into slices of 5 mm. Thicker slices stay sticky.
- Lightly brush the slices with lemon juice if you like and let them drain for a moment.
- Lay the slices side by side on a rack or on baking paper, without overlapping.
- Dry them for 6–10 hours in a dehydrator at 55–60 °C, or in the oven on its lowest setting with the door ajar (wedge a wooden spoon in it). Turn the slices halfway through.
- They are ready when they are pliable and leathery and no longer feel sticky. Let them cool completely before putting them in a jar.
Storing: Up to 6 months in an airtight jar in a cool, dark place. Check for condensation during the first week; if there is moisture, dry them a little longer. If you see mould, throw them away.
