Kiwi berry sorbet
- Makes: 4 servings
- Time: 15 min + 4 hrs freezing
- From: Hardy kiwi
Ingredients
- 500 g ripe kiwi berries
- 100 g sugar
- 100 ml water
- juice of 1 lime or lemon
Method
- Bring the water and sugar to the boil until the sugar has dissolved and leave the syrup to cool.
- Cut off the stalk and tip of the kiwi berries and blend them with the cooled syrup and the lime juice into a smooth purée. Sieve out the seeds for a finer sorbet.
- Pour the purée into a plastic tub and put it in the freezer.
- After 1 hour, and then every hour, stir the sorbet with a fork to break up large ice crystals. After about 4 hours it is ready.
- Take the sorbet out of the freezer 10 minutes before scooping.
Storing: Up to 2 weeks in the freezer, in a tightly closed tub.
