Vinegar · From Bladwijzer
Lime blossom vinegar
- Makes: ± 500 ml
- Time: 10 min + 2 weeks
- From: Caucasian lime
Ingredients
- 15 g fresh lime blossom (or 6 g dried)
- 500 ml cider vinegar or white wine vinegar (5–6 % acidity)
- 1 teaspoon honey (optional)
Method
- Shake the blossom and remove leaves and brown flowers.
- Put the blossom loosely in a clean 750 ml jar.
- Pour the vinegar over so everything is submerged. Use a glass or plastic lid, as vinegar corrodes metal.
- Leave to infuse for 2 weeks in a cool, dark place, shaking now and then.
- Strain through a fine sieve or a cloth and stir in the honey if you like.
- Pour the vinegar into a clean bottle and close.
Storing: A year, cool and dark. Use it for vinaigrettes and over grilled vegetables.
