Gooseberry chutney
- Makes: ± 3 jars
- Time: 1.5 hours
- From: Gooseberry
Ingredients
- 750 g gooseberries
- 1 onion
- 150 g brown sugar
- 200 ml cider vinegar
- 75 g raisins
- 1 tsp grated fresh ginger
- ½ tsp mustard seeds
- ½ tsp salt
Method
- Top and tail the gooseberries and finely chop the onion.
- Put all the ingredients in a heavy-based pan and bring to the boil.
- Simmer gently without a lid for about an hour, stirring regularly, until the chutney is thick and a spoon leaves a trail across the pan.
- Fill clean, hot jars with the hot chutney and close at once.
- Leave the jars for 2 to 4 weeks before opening: the flavour mellows.
Storing: Unopened, a year in a cool, dark place; once opened, keep in the fridge. Lovely with cheese, pâté or smoked mackerel.
