Syrup · From Bladwijzer
Gooseberry and mint cordial
- Makes: ± 600 ml
- Time: 45 min + overnight draining
- From: Gooseberry
Ingredients
- 600 g gooseberries
- 500 ml water
- 1 handful of fresh mint (± 15 g)
- juice of 1 lemon
- sugar: 600 g per litre of juice (± 350 g)
Method
- Top and tail the gooseberries and rinse them. Crush them lightly with a masher or fork.
- Bring the gooseberries to the boil with the water and simmer for 15 minutes.
- Pour everything into a sieve lined with a clean cloth, set over a bowl. Leave to drip overnight without pressing: this keeps the cordial clear.
- Measure the juice. Put it in a pan with 600 g sugar per litre of juice and stir until the sugar has dissolved.
- Add the mint sprigs and lemon juice, bring to the boil and boil for 5 minutes. Skim off the foam and remove the mint.
- Pour the hot cordial into clean, sterilised bottles and seal at once.
Storing: Unopened, 6 months in a cool, dark place; once opened, keep in the fridge and use within 1 month. Dilute 1 part cordial with 5–6 parts still or sparkling water; also lovely over yoghurt or ice cream.
