Dried bay leaves

  • Makes: 1 small jar
  • Time: 10 min + 1–2 weeks drying
  • From: Bay laurel

Ingredients

  • 20 to 30 undamaged, mature bay leaves

Method

  1. Pick the leaves on a dry day, ideally with a bit of twig attached.
  2. Rinse them only if needed, then pat them thoroughly dry.
  3. Lay them side by side on a rack or a sheet of kitchen paper in a warm, dark, airy place.
  4. Turn them after a few days so they dry flat and evenly.
  5. When they snap as you bend them, put them in a tightly closed jar.

Storing: Up to a year in a closed jar, kept dry and dark.
