Passion fruit panna cotta

Ingredients

  • 3 sheets of gelatine
  • 500 ml cream
  • 60 g sugar
  • 1 vanilla pod
  • 4 ripe, wrinkled passion fruits
  • 1 tablespoon honey

Method

  1. Soak the gelatine in cold water for 5 minutes.
  2. Split the vanilla pod lengthways and scrape out the seeds. Heat the cream with the sugar, vanilla seeds and pod until just below boiling point; do not let it boil.
  3. Take the pan off the heat and remove the pod. Squeeze out the gelatine and stir it into the warm cream until completely dissolved.
  4. Divide between four glasses, leave to cool and chill for at least 4 hours to set.
  5. Just before serving, spoon the pulp of the passion fruits into a small bowl, mix it with the honey and spoon it over the panna cotta.

Storing: Without the passion fruit, 2 days covered in the fridge; only add it when serving.
