Dried pear slices

  • Makes: makes ± 150 g dried pears
  • Time: 20 min + 6–10 hours drying
  • From: Pear

Ingredients

  • 1 kg firm, ripe pears
  • juice of 1 lemon
  • 500 ml water

Method

  1. Mix the lemon juice with the water in a bowl.
  2. Wash the pears, remove the stalks and cores and leave the skin on. Cut them into slices of 4–5 mm.
  3. Put the slices straight into the lemon water for 5 minutes, so that they do not turn brown. Drain and pat them dry.
  4. Lay the slices side by side on a rack, or on a baking tray lined with baking paper, without overlapping.
  5. Dry them for 6–10 hours in a dehydrator at 55–60 °C, or in the oven at 70 °C with the door ajar (wedge a wooden spoon in it). Turn the slices halfway through.
  6. They are ready when they feel pliable and leathery and no moisture comes out when you break one in half. Let them cool completely before putting them in a jar.

Storing: Up to a year in a tightly closed jar in a cool, dark place. If you see moisture or mould, dry them a little longer or throw them away. Lovely as a snack or in muesli.
