Syrup · From Bladwijzer
Red shiso syrup
- Makes: ± 1 litre
- Time: 30 min
- From: Perilla
Ingredients
- 200 g red shiso leaves
- 1 litre water
- 400 g sugar
- 150 ml cider vinegar or the juice of 2 lemons
Method
- Bring the water to the boil, add the shiso leaves and simmer for 10 minutes; the leaves turn green and the water dark purple.
- Strain and press the leaves well.
- Add the sugar and heat until dissolved. Then pour in the vinegar or lemon juice: the syrup turns bright pink at once.
- Pour it, boiling hot, into clean, hot bottles and seal.
Storing: Unopened, six months in a cool, dark place; once opened, a month in the fridge. Dilute 1 to 5 with still or sparkling water.
