Grilled peaches with honey and thyme
- Makes: serves 4
- Time: 10 min + 10 min grilling
- From: Peach
Ingredients
- 4 ripe but firm peaches or nectarines
- 2 tbsp runny honey
- 1 tbsp olive oil or melted butter
- 4 sprigs fresh thyme
- 150 g mascarpone or Greek yoghurt
- 30 g chopped pistachios or almonds
- 1 pinch of salt
Method
- Heat a griddle pan or barbecue to medium heat.
- Halve the peaches along the groove and remove the stones. Throw the stones away: never eat the kernel. Brush the cut sides with oil.
- Place the peaches cut side down on the grill and cook for 4–5 minutes, until they have grill marks.
- Turn them over, drizzle honey into the hollows and scatter over the thyme leaves. Grill for another 3–4 minutes, until soft but not falling apart.
- Loosen the mascarpone with a teaspoon of honey and a pinch of salt.
- Serve the peaches warm with a spoonful of mascarpone and the chopped nuts.
Storing: Best eaten straight away. Leftovers keep for 1 day in the fridge.
