Peach iced tea
- Makes: ± 1.5 litres
- Time: 20 min + 2 hrs chilling
- From: Peach
Ingredients
- 3 ripe peaches (± 450 g)
- 1 litre water
- 4 tsp black tea (or 4 tea bags)
- 3 tbsp sugar, to taste
- juice of 1 lemon
- ice cubes
- fresh mint
Method
- Boil the water and let it cool for a minute. Steep the tea in it for 4 minutes, then strain it out.
- Dissolve the sugar in the warm tea and leave to cool to room temperature.
- Halve the peaches and remove the stones. Blend two of the peaches (skin on) with the lemon juice to a smooth purée.
- Stir the purée into the tea. If you like, strain through a fine sieve for a clear drink.
- Slice the third peach thinly and add the slices. Chill for at least 2 hours.
- Serve over ice cubes with mint.
Storing: 2 days in the fridge in a covered jug. Stir before serving.
