Home-dried prunes

  • Makes: ± 300 g
  • Time: 15 min + 12–24 hours drying
  • From: Plum

Ingredients

  • 1.5 kg ripe, sweet quetsche plums

Method

  1. Wash the plums and pat them dry.
  2. Halve them, remove the stones and lay them cut side up on oven racks or dehydrator trays.
  3. Dry them for 12 to 24 hours at 60 °C with the oven door ajar (wedge it with a wooden spoon).
  4. They are done when leathery but still supple and no juice comes out when you squeeze them.
  5. Leave to cool and put them in a jar. Check during the first few days that no condensation forms.

Storing: Dry, cool and dark in a closed jar: six months; longer in the freezer.
