Plum liqueur

  • Makes: makes ± 1 litre
  • Time: 20 min + 6–8 weeks infusing
  • From: Plum

Ingredients

  • 500 g ripe plums
  • 250 g sugar
  • 500 ml jenever or vodka (35–40 %)
  • 1 cinnamon stick
  • 1 strip of zest from an unwaxed lemon

Method

  1. Wash the plums, halve them and remove all the stones. Do not leave any stones in.
  2. Put the plums with the sugar, cinnamon and lemon zest in a large, clean jar.
  3. Pour the spirit over them until everything is covered and close the jar.
  4. Leave to infuse for 6–8 weeks in a dark place and shake the jar every few days for the first weeks, until the sugar has dissolved.
  5. Strain the liqueur through a fine sieve or a cloth, pressing the plums lightly. Taste and add a little sugar syrup if you like.
  6. Pour the liqueur into clean, sterilised bottles and leave it to mature for another 2 weeks before drinking.

Storing: A year in a cool, dark place. The liqueur contains alcohol and is not suitable for children. A little sediment is normal. The drained plums are lovely with ice cream.
