Acacia-flower fritters

Ingredients

  • 12–16 flower clusters
  • 125 g plain flour
  • 1 egg
  • 150 ml beer or sparkling water
  • 1 tablespoon sugar
  • a pinch of salt
  • oil for deep-frying
  • icing sugar

Method

  1. Shake the clusters well and keep the stalk at the top to hold them by.
  2. Whisk the flour, egg, sugar, salt and beer into a smooth, fairly thick batter and leave to rest for 15 minutes.
  3. Heat the oil to 170–180 °C.
  4. Dip each cluster in the batter, let the excess drip off and fry for 1 to 2 minutes until golden.
  5. Drain on kitchen paper and dust with icing sugar. Nibble the flowers off the stalk; do not eat the stalk itself.

Storing: Eat straight away: fritters soon go soft.
