False acacia blossom liqueur
- Makes: ± 800 ml
- Time: 20 min + 2 weeks steeping + 2 weeks maturing
- From: False acacia
Ingredients
- 80 g loose robinia florets (± 6–8 clusters)
- 500 ml vodka or neutral spirit at 40 %
- 250 g sugar
- 250 ml water
- 1 unwaxed lemon, thin yellow zest only
Method
- Pick the clusters in full bloom on a dry, sunny day, well away from busy roads and sprayed fields. Shake out any insects.
- Pull the white florets off the stalks. Leave out the green calyxes too, and anything green: stalks, leaves and pods are poisonous.
- Put the florets and lemon zest in a clean 1-litre jar and pour the spirit over. Close and leave to steep for 10–14 days, in the dark at room temperature. No longer than 2 weeks.
- Bring the water and sugar to the boil until the sugar has dissolved and leave the syrup to cool completely.
- Strain the spirit through a fine sieve or a coffee filter and mix it with the syrup. Taste and sweeten a little more if needed.
- Pour into clean bottles and leave for another 2 weeks.
Storing: A year in a cool, dark place. The liqueur contains alcohol: not for children or for anyone who still has to drive.
