Cowberry compote

  • Makes: ± 3 jars of 250 ml
  • Time: 25 min
  • From: Cowberry

Ingredients

  • 500 g cowberries (lingonberries)
  • 250 g sugar
  • 100 ml water
  • 1 small strip of unwaxed lemon peel

Method

  1. Remove leaves, stalks and soft or unripe berries and rinse the berries briefly.
  2. Put them in a pan with the water, sugar and lemon peel and bring to the boil, stirring.
  3. Simmer gently for 10–15 minutes, until most of the berries have burst and the juice thickens.
  4. Remove the lemon peel and mash some of the berries with a fork for a firmer compote.
  5. Spoon the hot compote into clean, sterilised jars to the brim, close and turn them upside down for 5 minutes.

Storing: Unopened, a year in a cool, dark place; once opened, in the fridge and eat within 2 weeks. Goes well with meatballs, game, cheese and pancakes.
