Cowberry sauce for game

  • Makes: 4 servings
  • Time: 30 min
  • From: Cowberry

Ingredients

  • 100 g cowberries (fresh or frozen)
  • 1 shallot, finely chopped
  • 1 tbsp cold butter
  • 150 ml red wine
  • 200 ml game or veal stock
  • 1 sprig of thyme
  • 1 tbsp sugar or honey
  • pepper and salt

Method

  1. Sweat the shallot in half of the butter in a small pan until translucent.
  2. Add the red wine and reduce by half over a high heat.
  3. Add the stock, thyme, berries and sugar and simmer for 12–15 minutes, until the sauce thickens slightly and the berries burst.
  4. Remove the thyme and, if you like, blend the sauce with a stick blender. Season with pepper and salt.
  5. Whisk in the rest of the cold butter until the sauce is glossy. Serve at once.

Storing: 3 days in the fridge or up to 3 months frozen; reheat gently. Lovely with roast venison, wild boar, duck or goose.
