Crystallised rose petals
- Makes: ± 30 petals
- Time: 30 min + 1 to 2 days drying
- From: Garden rose
Ingredients
- ± 30 unblemished petals from a scented, unsprayed rose
- 1 pasteurised egg white from a carton (± 30 g)
- 100 g caster sugar
- a small, soft paintbrush
Method
- Pull off the petals, snip off the white base and clean them gently with a dry brush. They must be completely dry.
- Lightly beat the egg white with a fork until just frothy. Use pasteurised egg white: it is not cooked.
- Hold a petal with tweezers and brush both sides with a thin layer of egg white. Sprinkle both sides with sugar until completely covered, and tap off the excess.
- Lay the petals side by side on baking paper on a rack and leave them to dry for 1 to 2 days somewhere dry and warm until hard and crisp. Turn them over after a day.
Storing: Between sheets of baking paper in a well-closed box, dry and dark: a month. For decorating cakes, cupcakes, ice cream or panna cotta.
