Vinegar · From Bladwijzer
Rose petal vinegar
- Makes: ± 500 ml
- Time: 15 min + 2 weeks infusing
- From: Garden rose
Ingredients
- 2 large handfuls of petals from scented, unsprayed roses
- 500 ml white wine vinegar or cider vinegar
Method
- Snip the white base off the petals and put them loosely in a clean glass jar.
- Pour over the vinegar until the petals are completely covered. Close with a plastic lid, or put a sheet of baking paper between the jar and a metal lid: vinegar corrodes metal.
- Leave the jar in a cool place out of the sun for 2 weeks and shake it every day. The vinegar turns pink to red.
- Strain the vinegar, pressing the petals lightly, and pour it into a clean bottle.
Storing: A year in a cool, dark place; the colour gradually fades. Lovely in a dressing for a summer salad or over strawberries, with a little olive oil or honey.
