Black raspberry syrup

Ingredients

  • 750 g black raspberries
  • 250 ml water
  • 500 g sugar
  • juice of 1 lemon

Method

  1. Simmer the berries gently with the water for 5 minutes and mash them.
  2. Let them drip through a cloth into a bowl; do not squeeze too hard, so the syrup stays clear.
  3. Bring the juice to the boil with the sugar and lemon juice and boil for 3 minutes; skim off the froth.
  4. Pour, boiling hot, into clean, hot bottles and seal.

Storing: Unopened, six months in a cool, dark place; once opened, a month in the fridge. Dilute 1 to 5, or pour over ice cream and pancakes.
