Lilac vinegar

Ingredients

  • 40 g lilac florets (without stalks)
  • 500 ml white wine vinegar (6–7 % acidity)

Method

  1. Pull the florets off the clusters, leaving out any green parts, and shake them.
  2. Fill a clean 750 ml jar loosely with the florets.
  3. Pour the vinegar over so everything is submerged. Use a glass or plastic lid, as vinegar corrodes metal.
  4. Leave to infuse for 2 weeks in a cool, dark place, shaking now and then.
  5. Strain through a fine sieve or a cloth.
  6. Pour the vinegar into a clean bottle and close.

Storing: A year, cool and dark. Use it in vinaigrettes, over salads or over fresh goat’s cheese.
