Lilac sugar

Ingredients

  • 25 g lilac florets (1 large handful, without stalks)
  • 250 g granulated sugar

Method

  1. Pull the florets off the clusters, shake them and leave them to dry on a tea towel for 3–4 hours.
  2. Mix the florets with the sugar in a clean, dry jar.
  3. Close and leave for 2 weeks in a dark place. Shake daily during the first week so the sugar does not clump.
  4. Sieve out the florets if you like, or leave them in.
  5. Use the sugar in cakes, biscuits, tea or over fruit.

Storing: Six months in a closed jar, dry and dark. If the sugar clumps or turns damp, use it up quickly.
