Risotto with bladder campion

Ingredients

  • 300 g risotto rice
  • 150 g young bladder campion shoots
  • 1 onion
  • 40 g butter
  • 100 ml dry white wine
  • 1 litre hot vegetable stock
  • 40 g grated Parmesan
  • salt and pepper

Method

  1. Rinse the shoots and chop them roughly. Chop the onion.
  2. Soften the onion in half the butter, add the rice and stir for 1 minute until the grains are glossy. Add the wine and let it bubble away.
  3. Add a ladle of stock and stir until it has been absorbed; carry on like this, a ladle at a time. Add the shoots after 10 minutes.
  4. After 18 to 20 minutes the rice is cooked but still has some bite. Take the pan off the heat, stir in the rest of the butter and the cheese, season and leave to rest for 2 minutes with the lid on.

Storing: Risotto is best fresh; leftovers keep for a day in the fridge, or fry them into little cakes the next day.
