Hawthorn tea from flowers and berries

Ingredients

  • 2 handfuls of fresh hawthorn blossom (± 30 g)
  • 200 g ripe haws
  • boiling water: 250 ml per cup
  • honey (optional)

Method

  1. Shake out the blossom and spread it in a thin layer on a rack or on paper in an airy, shady place. Leave to dry for 5–7 days, until the flowers rustle and crumble.
  2. Wash the haws, pat them dry and lay them on a baking tray lined with baking paper. Dry them for 6–8 hours in an oven at 50–60 °C with the door slightly ajar, until hard and dry.
  3. Store the blossom and the haws separately in closed jars.
  4. For 1 cup: pour 250 ml boiling water over 1 teaspoon dried blossom, leave to steep for 10 minutes and strain.
  5. Or simmer 1 tablespoon dried haws in 250 ml water with the lid on for 10 minutes, strain and leave to stand for 5 minutes.
  6. Sweeten with honey if you like. Drink in moderation.

Storing: Dried blossom and haws keep for a year in closed jars, dry and dark. Make fresh tea each time and drink it the same day.
