Vervain tea

Ingredients

  • 1 teaspoon dried (or 2 teaspoons fresh) vervain, leaves and flower spikes
  • 250 ml water
  • a spoonful of honey or a slice of lemon

Method

  1. Bring the water to the boil and let it cool for a minute.
  2. Put the vervain in a tea infuser or teapot and pour over the water.
  3. Leave to steep for 5 to 10 minutes: the longer it steeps, the more bitter it gets.
  4. Strain and sweeten to taste with honey, or serve with a slice of lemon.

Storing: Drink it fresh, one or two cups a day at most. Dried vervain keeps for a year in a closed jar.
