Vine leaves in brine
- Makes: ± 50 leaves (1 jar of 1 litre)
- Time: 45 min
- From: Grapevine
Ingredients
- 50 young, undamaged vine leaves
- 1 litre water
- 60 g salt
- juice of 1 lemon
Method
- Rinse the leaves and snip the stalks short.
- Blanch them ten at a time for 30 seconds in boiling water, until they turn olive green; drain and leave to cool.
- Stack them in piles of ten, roll them up loosely and stand the rolls upright in a clean jar.
- Bring the water, salt and lemon juice to the boil and pour the hot brine over the leaves until they are fully covered.
- Close the jar and leave to cool. Before use, rinse or briefly soak the leaves in fresh water to remove the salt.
Storing: Several months in the fridge; make sure the leaves always stay under the brine.
